Homemade Banana Bread





There is just something about having a sweet bread ready for breakfast through the week that feels like home. I had some left over bananas from last week that were a little too ripe for just eating so I whipped up a super simple Banana Bread that's not too sweet and perfect for fall mornings. 

Banana Bread 

Ingredients-

3/4 cup of sugar

1/2 cup butter, softened

2 eggs

2 mashed, ripe bananas 

1/3 cup milk

1 teaspoon vanilla extract, or rum - I use rum. (Rum is a fantastic substitute for vanilla if you are out!)

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

Directions-

Heat oven to 350°F. 

Grease loaf pan with butter - very important, cooking spray will alter the flavor but you can use that if you prefer. 

In large bowl, beat sugar + butter until light and fluffy. 

Beat in eggs. 

Stir in bananas, milk and vanilla until well blended.

Mix flour, baking soda and salt in a separate bowl. (if you like nuts, this is where you would add them!) Add to banana mixture all at once; stir just until dry ingredients are moistened. 

Pour into pan.

Bake ~50 minutes or until toothpick inserted in center comes out clean.
